Our bacons are cured using no nitrates. This is a process the USDA refers to us "uncured." Historically, however, anything laid down in salt for a period of time and then smoked or dried, was referred to as "cured." We just use Himalayan salt and organic herbs and spices in our cures. Currently, all our bacons are smoked with Pennsylvania applewood.

We've been farming for over a decade. Everything we make begins with pasture-raised meat. We only add Himalayan salt and organic herbs and spices. We don't add nitrates, or any other preservatives - if it's in our kitchen cabinet, we'll make food with it!

We started our business as a community supported agriculture (CSA) farm. We originally sold all of our products in bundles, and these pre-built boxes are a nod to those bundles (CSA Shares). As always, everything is pasture-raised or grass fed.
